“There are two types of animal - the domestic and the wild. The product and the incidental. The rehearsed and the rehearsal. Cooking in liquid keeps meat tender and soft. A slow braise allowed the flesh to absorb a rich flavor. Excess broth can be reserved for rice, pilaf, or other dishes. “
